What's for Dinner? Baby Kale & Tuna Salad

I was recently inspired by a recipe I read on Jenna's blog Eat, Live, Run for "Italian Tuna Salad". If you haven't checked out her recipes, you should do yourself a favor and hop on over there. She's got some great stuff.

Being an avid salad eater myself, and given that I've been trying to incorporate more fish into my diet, this particular recipe caught my eye. Now, I'm pretty adventurous in the kitchen and I have to admit, I rarely follow recipes exactly (that's the Italian in me). So my dinner didn't exactly look like Jenna's, but I can assure you that I thoroughly enjoyed every bite.

What's in the bowl?

-organic baby kale
-chopped red onion
-one diced tomato on the vine
-red bell pepper
-half an avocado
-baby carrots
-sliced up strawberries
-one can of tuna packed in olive oil mixed with about a tsp of mayo and a dash of salt
-olive oil & red wine vinegar
-salt and pepper
